Ingredients
250 gr mushrooms
1/2 butternut squash
2 red peppers
2 red onions
2 zucchinis
400 gr chickpeas
100 gr feta cheese
375 gr bulgur
Olive oil
Preparation
Preheat the oven to 200 gr
1. Wash, peel and dice all the vegetables. Place them on a baking sheet and drizzle with olive oil. Also season with salt and pepper.
2. Stick the vegetables in the oven for 25 to 30 minutes.
3. Meanwhile, prepare the bulgur. Bring water to a boil and pour it over the bulgur. Cover the bowl with a clean kitchen towel and let swell for 10 to 15 min.
4. Mix your vegetables through the bulgur and top with feta.
