About the Recipe

Ingredients
3 carrots
1,5 union
3 red peppers
1.5 tablespoons of olive oil
900 grams of mixed minced meat
250 grams red beans (drained and rinsed if they come from a can)
400 grams of diced tomatoes (from a can)
210 grams of tomato puree
300 ml tomato passata
150 grams corn (drained if canned)
1 clove of garlic, finely chopped
Preparation
1. Preparation: Start by chopping the carrots, onion, red peppers and garlic clove. Make sure everything is cut into small pieces. Drain the red beans and corn and rinse them if they come from a can.
2. To cook: Heat the olive oil in a large pan over medium heat. Add the onion and garlic to the pan and fry until translucent. Then add the mixed minced meat. When the minced meat is brown, add the chopped carrots, red peppers, diced tomatoes, tomato puree and tomato passata. Stir everything well and let it simmer for about 10 minutes.
3. Finishing: Now add the red beans and corn to the pan. Let the chili con carne simmer for about 20 minutes so that all the flavors can mix well. Taste in between and season with salt, pepper and any additional spices of your choice (such as cumin, chili powder or paprika powder). I used ½ tsp chilli con carne spice mix from pit&pit.
4. Serve the chili con carne with rice. This dish is also delicious with some grated cheese on top, a spoonful of sour cream or some fresh coriander as a garnish.
