About the Recipe

Ingredients
400 gr orzo
2 tbsp olive oil
2 cloves of garlic
800 gr canned tomatoes
80 gr cottage cheese
250 ml pasta water
400 gr cauliflower rice
1 onion
2 tbsp italian herbs
1 kg minced meat
Minced meat spices
Pepper and salt
Preparation
1. Mix the minced meat with the mince spices, pepper and salt, then form balls. Fry these in a pan with olive oil and set aside.
2. Using the same pan from the meatballs, add the onion, garlic and cauliflower rice. Fry for 2 to 5 minutes.
3. Meanwhile, blend the cottage cheese and diced tomatoes in a blender. Add the mixture to the pan and season with Italian seasoning, salt and pepper.
4. Cook the orzo for about 10 minutes. Stir occasionally. Take some pasta water and add it to the sauce. Add the orzo to the sauce and mix well. Let it simmer for a few more minutes.
5. Place the meatballs on top of the orzo so they get warm again.
