About the Recipe

Ingredients
For the pulled chicken
1200 gr chicken breast
3 chicken stock cubes
1 onion
100 gr celery
For the bbq sauce
280 gr tomato puree
2 tbsp apple cider
2 tbsp soy sauce
1 tbsp lemon juice
2 tsp paprika powder
1 tsp garlic powder
Pepper, salt
1 tsp chicken seasoning
For the tacos
500 gr wholemeal flour
300 ml water
Salt
4 tbsp olive oil
Extra
Parsley
4 tomatoes
Red onion
Olive oil
Whole cottage cheese
Preparation
1. Peel the onion and cut it in half. Fill a saucepan with water. Put your celery, stock cubes and onion in it. When your water begins to boil, add your chicken breast to the boiling water. Let your chicken cook for 20 minutes.
2. Meanwhile, make your soft tacos. Put the flour in a mixing bowl with a pinch of salt. Make a well in the flour. Put your oil and water in it. Knead everything together well until it forms a ball of dough. Divide the dough into 9 dough balls. Put some cling film over them and set aside for 30 minutes.
3. Now make your sauce. You do this by mixing all the bbq sauce ingredients together.
4. Now start baking your tacos. Roll out your dough balls into tacos with a rolling pin. Fry your tacos in a pan on each side. Make sure they remain bendable. Do this for all the dough balls.
5. Remove your chicken from the broth. Pull it apart with two forks or you can use the whisk of your kitchenaid to loosen the chicken from each other. When the chicken is completely pulled apart, add the bbq sauce to it.
6. Put your chicken in your taco. Top with whole cottage cheese, chopped tomatoes, parsley, chopped red onion, ...
