Ingredients

For the cake

  • 250 gr gr grated carrots

  • 6 bananas

  • 6 eggs

  • 150 ml almond milk

  • 500 gr almond flour

  • 1 tsp baking powder

  • 2 tsp cinnamon


For the icing

  • 100 gr philadelphia

  • 100 gr skyr

  • 1 tsp cinnamon

Preparation

Preheat the oven to 175°C

Step 1


Mash the bananas. Add the eggs and mix well. Add the almond flour, baking powder and cinnamon. Mix everything together until combined. Add the almond milk and stir. Finally, add the grated carrots and mix well.



Step 2



Coat your baking pan with coconut oil and dust with flour. Pour your dough into the baking pan and pop your cake into the oven for an hour.


Step 3



Meanwhile, make your frosting by mixing all the ingredients together. Chop some walnuts for the finishing touch.


Step 4


Remove your cake from the oven and let it cool. When your cake is completely cold, cut it open horizontally and take the top half off for a moment. Coat the entire surface of the bottom layer with frosting. Put the top layer back on top of the other half. Now spread frosting on the top of your cake as well. Then sprinkle it with walnuts.
