Asparagus with Feta and Burrata

Ingredients

2 tablespoons olive oil


1 large clove of garlic (garlic), finely chopped


100 grams green asparagus tips


20 grams feta cheese, crumbled


1 burrata


Pepper and salt to taste


Roasted hazelnuts, coarsely chopped (for topping)


Finely chopped parsley (for topping)

Preparation

Preheat the oven to 200 degrees Celsius.


1. Wash the asparagus tips well and pat them dry with a clean tea towel. Cut a small slice from their bottom. Then place them on a baking sheet lined with baking paper.


2. Drizzle the asparagus tips with the olive oil and add the chopped garlic. Sprinkle with salt and pepper to taste and mix well so that the asparagus are evenly coated with the oil and herbs. Crumble the feta over the asparagus. Make sure the feta is well distributed on the baking sheet.


3. Place the baking sheet in the preheated oven and roast the asparagus for about 15-20 minutes, or until soft and lightly golden brown. Turn the asparagus once after 7 minutes.


4. Remove the baking sheet from the oven and place the roasted asparagus on a serving platter. Tear the burrata into pieces and divide among the asparagus.


5. Sprinkle the toasted hazelnuts and chopped parsley over the dish for an extra flavorful and crunchy topping.
