Ingredients
1 large eggplant
100 grams of soft goat cheese
1 ripe pear
A handful of walnuts
Olive oil
Honey (optional)
Salt and pepper to taste
Fresh thyme or rosemary (optional)
Preparation
Preheat the oven to 200°C
1. Cut the eggplant into slices about 1 cm thick. Sprinkle both sides of the slices with a little salt and let them rest for 15 minutes. This helps draw the excess moisture out of the eggplant. Then pat the slices dry with kitchen paper. Coat the eggplant with a drizzle of olive oil. Grill eggplant slices in the oven for 15 to 20 minutes. Turn them over once after 2 minutes.
2. Crumble the goat cheese over the warm eggplant slices. Cut the pear into small cubes and place on top of the goat cheese. Coarsely chop the walnuts and sprinkle them over the pear and goat cheese.
3. Stick the toast in the oven for another 2 minutes so that the goat cheese melts a bit.
4. Drizzle the toasts with a little honey if you want a sweet touch (optional). Season to taste with salt and pepper. If desired, garnish with some fresh thyme or rosemary for extra flavor.
