Homemade Hummus

About the Recipe

Ingredients

  • 1 can of chickpeas (drained and rinsed)

  • 1/4 cup of fresh lemon juice

  • 1/4 cup of well-stirred tahini

  • 1 small garlic clove (minced)

  • 2 tablespoons of extra-virgin olive oil

  • 1/2 teaspoon of ground cumin

  • salt to taste

  • 2 to 3 tablespoons of water

Preparation

1. In a food processor, combine the tahini and lemon juice and process for about 1 minute. This helps to whip the tahini, making the hummus smooth and creamy.


2. Add the minced garlic, ground cumin, and a pinch of salt to the whipped tahini and lemon juice. Process for another 30 seconds, scraping down the sides of the bowl as needed.


3. Add the chickpeas to the food processor. Process for about 1 minute, then scrape down the sides and bottom of the bowl. To achieve a smoother texture, process for an additional 1 to 2 minutes until the mixture is thick and quite smooth.


4. With the food processor running, slowly add 2 to 3 tablespoons of water until the hummus reaches your desired consistency.


5. Taste and adjust the seasoning, adding more salt, lemon juice, or cumin as needed. Serve the hummus in a bowl, garnished with a drizzle of olive oil, a sprinkle of paprika, and chopped parsley if desired.
