About the Recipe

Ingredients
1 bulb of burrata
10-12 cherry tomatoes
2 tablespoons green pesto
1 handful arugula
1 tablespoon extra virgin olive oil
Salt and pepper to taste
Preparation
1. Wash and halve the cherry tomatoes. Rinse the arugula under cold water and drain well.
2. Place the arugula on a plate as a base. Divide the halved cherry tomatoes evenly among the arugula.
3. Place the ball of burrata in the center of the plate on top of the arugula and tomatoes.
4. Spoon the pesto over the burrata and salad. You can also lightly mix the pesto with the arugula and tomatoes for extra flavor.
5. Drizzle the salad with the extra virgin olive oil. Season to taste with salt and pepper. Serve immediately so the burrata remains deliciously fresh and creamy. You can also sprinkle some toasted pine nuts or walnuts over the salad.
Serve with a piece of crusty bread to spoon on the pesto and burrata.
